Amaranth is highly nutritious and very high source of protein. Amaranth is known as a high yield crop. This means that you get a lot of yield per plant so you actually don’t need to grow a lot of it to get a lot of crop.
Amaranth is a little like quinoa. Easier and quicker to grow than rice and wheat and best of all, easier to process. I grew some of this a few years ago and had fantastic results. In fact, I wish I planted some this year now!
