When eaten, raw acorns have a really bitter taste and will leave a funny astringent feeling in the mouth, some people presumed that they were poisonous to eat but they just don’t taste that good – and so it’s best to process them before making use of them.
To process acorns, you are going to need to boil them in several changes of water to eliminate the bitterness that is naturally occurring because of the tannins. From here you can eat these straight away or it’s popular to grind them into flour.
Making Acorn Coffee
There is no caffeine in acorn coffee. That is important to mention from the beginning. This is a warm dark drink with a distinct flavor. It is not going to taste much like coffee but it is great in the cold mornings.
The process to make acorn coffee, however, is very similar to making regular coffee. You need peel, dried acorns and they are going to be ground and used in hot water.
Peeling and Drying the Acorns
Boil your acorns for 20 minutes. This is going to leech some bitterness and make them easier to peel.
Once you peel and split your acorns, either with a knife or a baton of wood, you can set them in a cool dry place for 24 hours. In this time the acorns will dry enough to be ground.
Grinding and Brewing
You will want to grind these acorns as thoroughly as possible. This will make all the difference in brewing. If you have access to a coffee grinder, use it. If you are outside a mortar and pestle will likely be your best bet.
Roast the grinds until they become aromatic. Be careful because they can burn fast.
Use three tablespoons of your grinds to one cup of water. You can use a french press to make a lot of this acorn coffee or a simple strainer.
Add milk if you like or enjoy in all its glory.
