Did you know that new cast iron pots and pans are simply cast which means if you look at them through a microscope you will see more of a textured finish.

Older cast iron pans were almost always machine polished to a glass like surface. For that reason I would highly recomend seeking out older pans from family members who do not use them or check out the antique stores, I have seen them for as low as 5 bucks.

All you need is a little elbow grease, some patience and a few dollars and you can have an old rusty pan looking brand new and cook from it the same day! Check out how to do this.
