The abandonment of nutrition happens real quickly when it comes to some prepping methods. It would seem that as disaster hits we fall out of the fresh foods mentality and into the canned and processed food mentality. In some ways its understandable but honestly, we need to think bigger and do more to assure we keep our nutrition up.
The age of nutritional ignorance is over. We just know too much now. We now how eaten can kill us and how it has caused obesity, diabetes and things like heart disease. The goal should be to create a stockpile of food and a method of creating fresh foods. We should also look at fermented foods.
Eating fermented foods gives our digestion a serious boost. The more efficiently we digest food the more we get out of our food and the less trouble we have to digest these foods.
For a long time we thought that probiotics only existed in things like yogurt. Now it has become very apparent that we have been ingesting live cultures for a very long time. The food that was most hidden in plain sight was cheese. It is aged and active cultures are used to make it. Good quality aged cheese also stores really well in basements and cool areas.
Even simply preserving things can turn them into powerful fermented foods. Sauerkraut is one such food that is filed with probiotics and its basically old cabbage and salt that can sit covered in a corner somewhere. All of the microbes and cultures that develop in that time are great for your health.
Don’t forget about nutrition in a disaster. You can put away nutritionally dense foods today so that you can prepare yourself for tomorrow. Food storage should be part of your plan but it should not be all of it.
